Remember the days when we used to get things besides bills in the mail?

Like when family and friends would actually write us letters?

I remember being so excited every time something would come from my grandparents, one of my long-distance friends, or a pen pal I was connected with through school.

For a long time, the only letters that were slid into my mailbox were from the bank, my credit card company, or Revenue Canada (woops).

But lately I’ve been getting a lot more exciting deliveries….that include food!! 😀

Look at all the chips!!

Being the chip fanatic that I am, this was an especially awesome delivery. I don’t eat chips that often anymore because I will happily devour the bag on one sitting, so it was a little dangerous to suddenly have 5 in my cupboard.

I connected with some of the guys from Way Better Snacks back at the CHFA tradeshow in April and loved what they had to offer. When it comes to chips, tortilla chips are often a better-for-you option than potato because more often than not they contain more simple ingredients and less scary ingredients.

Way Better Snacks chips take it one step further by using sprouted whole grains which are easier on your digestive system, non-GMO corn, omega-3s, antioxidants, and no scary flavour-boosters like MSG.

Nope, Mustard and Onion is actually flavoured with mustard and onion, and the main flavouring in Sweet Chilli is chilli powder.

So many delicious flavours

I knew I couldn’t be trusted with 5 bags of chips in the house, so I gave one bag to my parents and one bag to a friend who runs a household full of boys who don’t like tortilla chips.

Neither bag lasted very long, and I soon received texts letting me know they were the “perfect bundle of yum” and wondering where they could buy them.

Jordan and I actually took our time finishing the other three bags. Usually when I have potato chips I kind of black out while I’m eating them and before I know it there’s an empty bag on the table and crumbs all over my shirt.

But these were so flavourful I actually felt satisfied after eating one two servings! #SayWhaaat?!

I’d have to say my favourites were a toss-up between the Blue Corn and the Sweet Chilli – the Sweet Chilli had a really nice kick to it, but I do love me a plain tortilla chip.

But for our last bag, Sriracha, I decided to get a little crazy with it.

And by crazy I mean crush up the chips and use them to coat salmon 😀 And oh em GEE it was delicious.

While you could technically use any type of tortilla chips, I HIGHLY recommend Way Better Snacks’ Sriracha. It packs a ton of flavour, and even Jordan who despises anything-salmon said “it actually looks kinda good”!

Combined with a little bit of dijon mustard, this super-healthy three-ingredient Tortilla-Crusted Salmon will leave your taste buds satisfied. You can also feel good about it knowing you were able to eat chips for dinner without consuming a ton of junk 😉

You Will Need:

  • 1 4-oz piece of salmon
  • 1 cup of Way Better Snacks Sriracha Tortilla Chips
  • 1 tbsp dijon mustard

Directions: 

1. Preheat the oven to 400F

2. Place salmon on a foil-lined baking sheet skin-side down and cover with dijon mustard.

3. Crush tortilla chips using your hands (get in there!!!!) and then evenly coat the salmon.

4. Bake for approximately 10 minutes, serve with your favourite veggies, and enjoy!

    Dijon mustard and salmon go together so well!! I’ve never tried with tortilla strips before though! Sounds good!

      I agree! I’m not a huge fan of dijon but I love it with salmon. Tortilla chips are a delicious addition to anything 😉

    I love this idea for chips! I’m not a huge fan of salmon but if its crusted in chips that could entice me!

    I am a HUGE fan of Way Better Snacks and the sweet chili are my favorite!! they never last long in my house 😉 what a genius idea to coat them over salmon.

      I’m sure if you check a local Whole Foods, Sprouts, or other natural grocery store you’ll be able to get your hands on a bag!

    I haven’t had this brand, but I have used chips as my breading for my chicken. I made some with multi-grain cheddar chips. So good! Sriracha Tortilla Chips sound yummy!

    Aww, I definitely miss snail mail! I used to write to my teachers/friends/cousins all the time, but as we all grew up and lost all our free time, that went out the window. Packages in the mail make me all sorts of happy though! <3

    Those chips sound delicious! (It's dangerous to leave me with bags of chips in the house too. They'd disappear very quickly. D: ) I love that you used em' to prepare salmon! 😀 What a genius idea! <3
